Moroccan Lentils


I love to cook  and share some of the things I come up with while I play on my "Lab Day's". Here is  Moroccan Lentils.  Feel free to change this to your dietary needs or what you like! I hope you enjoy it!

Moroccan Lentils


· 2 Medium yellow onion chopped
· 5 Garlic cloves chopped
· 2 Tablespoon of Olive Oil
· 1/2 cup of White Wine
· 1 (28oz) of diced tomatoes
· 2 cups of dried lentils
· 1/2 Tablespoon of chopped fresh Ginger
· 1 teaspoon of Curry
· 1/2 teaspoon of Cumin
· 1/2 teaspoon of ground Cardamom
· 1/2 teaspoon of ground Coriander
· 1/4 teaspoon of Black Pepper
· Red Pepper to taste
· 7 cups of Chicken or Vegetable broth


1. Sauté onions & garlic in olive oil till the yellow onions are translucent. Add white wine and let it cook for a few minutes, just enough to cook the alcohol out.  Add tomatoes, spices, lentils and broth, bring to a boil, then cover and turn the heat down to a simmer for about 45 minutes.
2. Serve with rice

Stone Age Tree







Tree #3  has been the oldest ally tree for us humans.  They have found it on diggings at Stone Age Site, Hippocrates used it. And we modern man use it to this day.  Nutritional Value: Vitamin A & C

 

The flowers and berries are edible, but not the leaves or bark, they are poisonous!  So if your not sure on which ones to Harvest out in the wild. Its always good to go with a professional your first time out!





The Elderberry has quite a history.  Probably as far back as you can imagine.  Stone Age you ask?  Yup!  Even as far back as that!   Its main use is to support the Immune System.  The American Indians used it as a Tonic and a food source for making wine and syrup.








In our modern times we still use the berries for all kinds of things; wine, food, cough syrup, tinctures, cordials, teas...etc.



 
Elderberry Syrup Recipe


1 cup Fresh Elderberries or 1/2 cup of dried Elderberries
3 cups of water
1 cup raw honey
1 Cinnamon stick
3 Cloves
1 Ginger root (the size of your thumbnail)
1 Orange rind (from a whole orange)


1. In a medium size saucepan, put in berries, water and spices. Bring to a boil, reduce heat to a simmer.  Simmer for at least 30 minutes.
2. Then smash the berries in the saucepan to get more of the good stuff out.  Strain the juice over a bowel and allow to cool, then add the honey, stir.
3. This syrup will keep for 2-3 months if you store it in the fridge only.
