This City Girl would have never thought that acorns are considered edible like any other nut. Special care is needed when eating acorns , but you can process them a certain way to ease that bitter taste. The White Oak Family (Quercus) acorns are said to be less bitter and can be eaten with out the processing.
The photos to your left and above are an example of two types of acorns from the White Oak Family: The White Oak (Quercus alba) and the Burr Oak (Quercus macrocarpa).
